If you’re at the point where you want to try something for dinner (since we’ve been stuck at home for months and months now), then give this combination a try.

It’s a meat and potatoes dish, which is the type of food I was raised on, and honestly, it never gets old.

I brushed the salmon with homemade herb butter and popped it in the oven for 45 minutes at 400 degrees.

Then I grabbed a large sweet potato and half a dozen Yukon Gold potatoes, peeled, quartered, and boiled them.

After those suckers were fork tender, I drained off the water and added a stick of butter, extra virgin olive oil, an assortment of chopped fresh sweet basil, thyme, and oregano.

I grabbed the potato masher and got my mash on big time.

Then I added sea salt, and freshly cracked black peppercorns, and a cup of grated Parmesan and continued mashing.

I also added 1/4 cup of heavy cream, but you can use half-n-half or even whole milk.

Salmon Potato Bake Dinner Recipe (4)What You Will Need

Salmon. I used one large salmon filet, baked whole and cut in half to serve. I made a marinade using herbs, melted butter, extra virgin olive oil, sea salt, Old Bay seasoning, and freshly cracked black peppercorns.

Potatoes. For the mashed potatoes, I used one pound of sweet potatoes, and two pounds of Yukon Gold potatoes, a stick of butter, a cup of half-n-half, or whole milk, an assortment of herbs like fresh thyme, savory, basil, and oregano.

I added sea salt or Kosher salt and freshly cracked black peppercorns to taste.

Butter, Half-n-Half & Herbs. This recipe isn’t for the faint of heart; I use butter in the salmon recipe and the mashed potatoes. You can also use ghee or a vegan variety of butter as well.

I used half-n-half, but if you want to go dairy-free, use unsweetened almond milk or any plant-based milk you prefer. When it comes to herbs, I prefer fresh but use dried varieties as well. I grabbed fresh basil, oregano, savory, and thyme from our family garden.
